I just look at the hellomoto sites and it seems to suggest that V500 support Buletooth as well.
But when i check on the V525 it doesn't state anywhere that it does.
Therefore this may be the difference between them.
That is the first thing.
The second thing is that if V500 does support bt then this make V600 not so interesting as everything would be the same apart from slightly thinner case and video playback software.
Oh... and as somebody points out... they have diffferent type of screen as well.

sorry but the V500 and the V525 are equal beside the software (V525 Vodafone Live!). This is an official statement of Motorola Germany.
The differences between the V500/525 and the V600 are:
V600:
- generally other materials eg. metal housing (exchangeable)
- video playback
- Colorful call-indicator rings
- slighly smaller size
- other target group (business -> more expensive)
V500:
- plastics, not exchangeable
- no video playback
- no call indicator beside outside Display
- slightly larger size
- other target grop (young/fashion -> less expensive)

Motorola and ATI team up for new V series
News by Siddharth Raja on Wednesday October 22, 2003.
"It looks like Motorola is doing whatever it can to ensure the success of their upcoming V series of phones. The V300, V500, and V600 handsets will all feature an integrated ATI IMAGEON 2250 multimedia and graphics co-processor to enable advanced multimedia funtions. This includes support for the integrated digital cameras, 15-frames per second image capture, electronic viewfinder, on-the-fly JPEG encoding of pictures, as well as JPEG and MPEG-4 decoding. ATI is also claiming that their co-processor will decrease power consumption in many cases."
